Peanut Butter Buttercream

cupcakes 2 One of my best friend's baby shower was this past weekend, and I was supposed to make 75 cupcakes for the occasion. But we all know how Lindsay goes a little overboard sometimes, and I ended up making a little over 120 cupcakes. Oops. But I can tell you that the extras were very welcome at the shower and pretty much everything was eaten up!

One of my most requested cupcakes that I make are chocolate peanut butter. These guys are so sinful and delicious and taste like a peanut butter cup in cake form. In fact, I always top off the cupcakes with a mini peanut butter cup to add to the yum. I really should have made more of these for the shower because they were the first ones gone!

I just wanted to share with you my favorite favorite peanut butter buttercream recipe. This seriously could be eaten right off the spoon while dancing around the kitchen listening to the new Robin Thicke song, not that I know from experience or anything... (Blurred Lines is THE song of the summer, BTW)

So without further ado...here's the recipe!

Peanut Butter Buttercream

1 cup smooth peanut butter 1 cup softened unsalted butter 3 cups powdered sugar 1 teaspoon vanilla 3 tablespoons milk (I used water on this occasion and it still tasted great)

Directions: Beat the peanut butter and the butter until combined and completely smooth. Beat in vanilla. Alternate beating in the powdered sugar and the milk or water, until the buttercream is super light and fluffy. Use this as the perfect filling or frosting for your favorite chocolate cake recipe!
